Hummus

Prepare time: 10 min

Yields: 2 3/4 Cups

Ingredients:

  • 4 cloves of garlic
  • 2 cups of canned chickpeas
  • 1.5 tsp of salt
  • 1/3 cup of sesame paste
  • 6 tbsp of lemon juice
  • 2 tbsp of water
  • 8 dashes of hot sauce

Method:

  1. Turn the food processor on and pass the garlic cloves through the feed tube letting them process until they are minced.
  2. Transfer the remaining ingredients to the food processor and process them roughly.
  3. Taste the hummus and adjust the seasonings.

Peanut Butter Balls

Prepare time: 1 hour

Yields: 30 Balls

Ingredients:

  • 18 ounces of Peanut Butter
  • 16-ounces of confectioners sugar
  • 1 1/3 cups of graham crackers
  • 3/4 cup unsalted butter
  • 12 ounces melted milk chocolate

Method:

  1. Mix peanut butter, graham crackers, confectioners’ sugar and butter in a bowl.
  2. Make around 32 balls with this mixture and refrigerate it for about half an hour till they become firm.
  3. Coat these balls with melted chocolate and transfer them to paper cupcake forms.
  4. You may serve the balls when the chocolate sets.

Pie Crust

Prepare time: 15 min

Inactive Time: 1 hour

Cook: 25 min

Total time: 1 hour 30 min

Yields: 1 piecrust

Ingredients:

  • 3 ounces of chilled butter
  • 1 ounce of chilled lard
  • 1 cup all-purpose flour, plus additional for rolling the dough
  • 1/2 tsp salt
  • 1/4 cup ice-cold water

Method:

  1. Transfer salt and flour to the food processor bowl and pulse it a few times to combine.
  2. Add butter and lard and pulse it 5 to 6 times.
  3. Uncover the bowl and sprinkle cold water. Cover it back and pulse it 6 times.
  4. Add more water if required and pulse until the contents form smooth dough.
  5. Transfer the dough to a plastic bag and press it to form a disk. Place it in the fridge for half an hour.
  6. Preheat oven at 425 ᵒF and refrigerate a pie dish.
  7. Take the dough out and cover it with dry flour. Now place it back inside the plastic and roll it out using a rolling pin.
  8. Take out the pie dish and spread the rolled out dough on the dish and press lightly. Cut the corners if required. Refrigerate for about 15 minutes.
  9. Place it in the preheated oven and bake for about 20 minutes or until the edges turn golden.
  10. Take it out of the oven and let it cool down before adding the filling to it.

Tomatillo Salsa

Prepare time: 15 min

Cook: 25 min

Total time: 40 min

Yields: 4 Cups

Ingredients:

  • 1 pound of tomatillos
  • 12 ounces Spanish onion, cut into pieces
  • 3 cloves of garlic
  • ½ cup of chopped cilantro
  • 1/2 jalapeno
  • Juice from ½ lime
  • Salt

Method:

  1. Wash the tomatillos, cut them into 4 parts and transfer them to food processing bowl.
  2. Add garlic and onions and run the food processor till you obtain a smooth paste.
  3. Now transfer lime juice, cilantro and jalapeno to the food processor and run it till jalapeno is chopped completely.
  4. Take it out in a pan, add salt and cook it over medium flame. Let the liquid evaporate till you get the right consistency of your salsa.
  5. Store it in the refrigerator and served chilled.

Fusilli with Spicy Pesto

Prepare time: 10 min

Cook: 34 min

Total time: 54 min

Yields: 5 Servings

Ingredients:

  • 1 cup of chopped walnuts
  • 2 cloves of garlic, chopped
  • 1 jalapeno, stemmed and chopped
  • 2 cups shredded Asiago cheese
  • Salt and pepper
  • 3 ounces of baby spinach
  • 3 ounces of arugula
  • 1/4 cup olive oil
  • 1 pound of fusilli pasta
  • 4 ounces of shaved Asiago cheese

Method:

  1. To make pesto, add walnuts, jalapeno, cheese, garlic, salt and pepper to your food processor work bowl and run the machine to get a smooth paste. Transfer spinach and arugula to the mixture and process until smooth. Add a little olive oil to the contents and pulse to combine.
  2. Add water and salt in a large saucepan and let it boil. Transfer pasta to the boiling water and let it cook for about 10 minutes or until the pasta cooks completely.
  3. Save some of the pasta water. Transfer the cooked pasta to a bowl and also include the pesto. Mix well and if the mixture is too thin, add some of the pasta water that you saved.
  4. Add salt and pepper as required. Top with shavings of cheese before serving the dish.
